Since I had a request for the Chocolate Dipped Cinnamon Thins, I thought I would post the recipe here for everyone :o) This recipe comes out of the Treasury Of Desserts book and it was the first time that we have tried it. The cookies are pretty good, even without the chocolate!
Chocolate Dipped Cinnamon Thins
1 1/4 cups all-purpose flour
1 1/2 teaspoons ground cinnamon
1 cup unsalted butter, softened
1 cup powdered sugar
1 large egg
1 teaspoon vanilla
1/4 teaspoon salt
4 ounces broken bittersweet chocolate
Place flour and cinnamon in small bowl; stir to combine.
Beat butter in large bowl with electric mixer at medium speed until light and fluffy. Add sugar; beat well. Add egg, vanilla and salt; beat well. Gradually add flour mixture. Beat at low speed until well blended.
Place dough on sheet of waxed paper and roll back and forth to form a log about 12 inches long and 2 1/2 inches wide. Securely wrap log in plastic wrap. Refrigerate at least 2 hours or until firm. Log may be frozen up to 3 months; thaw in refrigerator before baking.
Preheat oven to 350 F. Cut dough with a long, sharp knife into 1/4-inch-thick slices. Place 2 inches apart on ungreased cookie sheet. Bake 10 minutes or until set.
Melt chocolate. Dip each cookie into chocolate, coating 1/4 of cookie. Let chocolate set before storing cookies between sheets of waxed paper. Cookies can be stored at cool room temperature or in refrigerator. They do not freeze well.
Makes about 2 dozen.
Shannon was also looking for a chewy chocolate chip cookie recipe and this one just may suit her needs. It's an old family recipe that's been made over and over and over again :o)
Grandma's Chocolate Chip Cookies
1/2 cup shortening
1 egg
1/2 cup brown sugar
1/4 cup white sugar
1 teaspoon vanilla
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips
Mix shortening and egg together. Add both sugars and vanilla, making sure they are well combined. In a separate bowl, mix dry ingredients. Gradually add dry ingredients to the wet mixture. Add chocolate chips.
Preheat oven to 350 F. Spoon on ungreased pan and flatten with floured fork. Bake for 8 to 10 minutes.
Makes about 1-2 dozen cookies. We usually double the recipe :o)
